delicious grain free muffins

I was a little skeptical when I read this recipe but wanted to give it a try. We've been trying to cut back on bread around here so this seemed too good to be true. A muffin without any bread?! No way. Well we made them and they ROCK. They are super easy to make - just throw everything in a food processor, pour into a muffin tin, and pop them in the oven. They are the perfect treat for this snowy morning! Hope you enjoy.

Ingredients

1 cup peanut butter (or any other nut butter)
2 ripe bananas 
2 eggs
1/2 tsp baking soda
1 tsp apple cider vinegar
2 TB honey
4 dates
1 tsp cinnamon
1/2 tsp vanilla extract
1/2 tsp almond extract
1/2 c chocolate chips

Throw everything in the food processor except chocolate chips. Blend until smooth and then fold in chocolate chips.  Bake at 400 for 15 minutes. 

Next time I think we'll try using blueberries instead of chocolate chips and adding in some walnuts. There are so many ways to try this recipe!
